CAST IRON SKILLET BARBEQUE  BRAISED BEEF SHORT RIB

Ingredients

  • 3 Pounds Red Baby Potatoes Potatoes
  • 3-4 Cups Chicken Broth
  • 6 Hard-boiled Eggs (4 for Potato Salad, 2 for Garnish)
  • ½ Pound Bacon (Cooked until crispy, then chopped)
  • 1 Cup, Celery (diced)
  • 1 Cup, Yellow Onion  (Finely chopped)
  • ½ Cup Sweet Relish
  • 1 Cup Miracle Whip
  • ½ Cup SWEEETHEAT Sweeet St. Louis BBQ Sauce
  • ⅓ Cup Yellow Mustard
  • Salt and Pepper (to taste)
  • Paprika for Garnish (Optional)
  • Green Onion for Garnish (Optional)

Step by Step Instructions

Step 1

Cut the baby potatoes into quarters and place them in a large pot. Add chicken stock to pot. Broth should be approximately 1 to 1 1/2 inches above the potatoes. If needed, add additional broth or water to the pot for full coverage.

Step 2

Bring the pot to a boil over medium-high heat and cook potatoes until they are slightly tender (roughly 8-10 minutes – potatoes should be tender but should not fall apart). While potatoes boil, fry the bacon until crispy in a separate pan.

Step 3

Once the potatoes have reached desired tenderness, remove from the stove and strain in a colander. Run cold water over potatoes to cool. Place cooled potatoes in a large bowl. Set aside the bowl of potatoes while you prepare the dressing.

Step 4

Prepare the potato salad dressing by whisking Miracle Whip, SWEEETHEAT Sweeet St. Louis BBQ Sauce, and yellow mustard together until well combined. Set aside.

Step 5

Add celery, onion, sweet relish, and four of the hard boiled eggs to the bowl with your cooled potatoes. Next, pour approximately half the potato salad dressing over the top. Use a large fork or spatula to mix ingredients until coated. (Note: Using a large fork is helpful in breaking up the hard boiled eggs.) Gradually add remaining dressing to the bowl and continue to mix until all ingredients are coated evenly.

Step 6

Cover the bowl and place potato salad in the refrigerator to chill for at least two – three hours before serving. When ready to serve, slice the remaining 2 hard boiled eggs into halves or quarters, and arrange on top of potato salad. Garnish with paprika and green onions.

Step 7

(Optional) You can allow potato salad to rest on the counter for 20 minutes to come to room-temperature before serving.
