But at SWEEETHEAT we like to change the game and our Chipotle Fried Chicken and Sweet Potato Waffles recipe is just what you need to elevate this brunch favorite! Our iconic rendition of this meal features crispy fried chicken tenders drenched in SWEEETHEAT Chipotle Wing Sauce and served on top of a delicious sweet potato waffle that has been spiced with SWEEETHEAT’s Southern BBQ Blend. With a kick of zest and a hint of zip, SWEEETHEAT’s Chipotle Wing Sauce packs a flavorful punch! Featuring the distinctive smokiness of chipotle peppers in adobo, and pairing it with sweet honey, garlic, onion and a touch of vinegar, our sauce will ignite your taste buds and have you yearning for more. Chipotle Fried Chicken with Sweet Potato Waffles

For the Chicken

  • 1 Pound of Chicken Breast Strips or Tenders
  • 1 ½ Tablespoons SWEEETHEAT Southern BBQ Blend
  • 1 Teaspoon Salt
  • 1 Cup of Flour
  • ¼ Cup Cornmeal
  • 2 Eggs Beaten
  • ½ Cup SWEEETHEAT Chipotle Wing Sauce
  • Peanut Oil (or Vegetable Oil) for frying

For the Sweet Potato Waffle

  • 1 ¾ Cups Whole Milk
  • 2 Eggs
  • 1 Stick Melted Butter
  • ¼ Cup Pureed Sweet Potato (Canned)
  • 1 ½ Cup Flour
  • ¼ Cup Dark Brown Sugar
  • ¼ Cup Granulated Sugar
  • 2 Teaspoons baking powder
  • 1 Teaspoon baking soda
  • 1 Teaspoon salt
  •  Nonstick cooking spray or butter

Step by Step Instructions

Step 1

For the Chicken

In a heavy-bottomed frying pan (or cast iron skillet) heat oil on medium-high until hot. At the same time, preheat the oven to 200F degrees. Line a baking sheet with aluminum foil and place a wire rack on top. Set aside.

Step 2

Place chicken tenders in a bowl and season with 1 tablespoon of SWEEETHEAT Southern BBQ and salt. Set aside.

Step 3

In a large shallow bowl, add the beaten egg. In another large shallow bowl combine the flour, cornmeal, salt, and the remaining 1⁄2 tablespoon of SWEEETHEAT Southern BBQ Blend.

Step 4

Dip each chicken tender into the beaten egg, shaking off any excess, before dipping in the flour mixture. Repeat once more, dipping into egg followed by the flour mixture. Transfer coated tenders to a plate.

Step 5

Once oil is heated, add chicken tenders to the frying pan and fry on medium heat until golden brown. Approximately 5-7 minutes per tender. Transfer finished tenders to the prepared baking sheet, and place in the oven while you make the waffles. (See Instructions For the Waffles).

Step 6

Before serving on top of waffles place SWEEETHEAT Chipotle Wing Sauce into a large bowl, and add the fried tenders. Using a large wooden spoon or by moving the bowl in circular motion, toss the tenders until they are evenly coated with SWEEETHEAT Chipotle Wing sauce.

Step 7

Serve on top of Sweet Potato Waffles, drizzle with additional SWEEETHEAT Chipotle Wing Sauce if desired.

Step 1

For the Waffles

In a large bowl, whisk together eggs, milk, melted butter and pureed sweet potato until well combined.

Step 2

In a separate bowl, combine flour, dark brown sugar, granulated sugar, baking powder, baking soda and salt. Stir until blended.

Step 3

Add the combined dry ingredients to the wet ingredients and whisk together until a smooth batter has formed. Let the batter rest for five minutes to firm.

Step 4

Heat a waffle iron and spray with nonstick cooking spray. Ladle the batter until it just fully covers the waffle iron.  Close and cook just until a deep golden brown.

Step 5

Transfer waffles to plates and top with chipotle chicken tenders. Drizzle chicken and waffles with SWEEETHEAT Chipotle Wing Sauce
