    • 2 Fillet of salmon
    • 2 Cups of cooked rice
    • 1 Avocado peeled and cubed
    • 1 Ripe Mango peeled and cubed
    • ½ Red onion diced
    • 1 Tablespoon of orange juice
    • 1 Tablespoon lime juice
    • 1 Tablespoon chopped cilantro
    • ¼ Cup olive oil
    • 3 Tablespoons SWEEETHEAT All Purpose Rub
    • Fine sea salt and black pepper to taste

 

Step by Step Instructions

Step 1

In a medium sized bowl combine one tablespoon of olive oil, the orange and lime juice, chopped herbs, red onion, avocado, and mango. Season with salt and pepper. Cover and set aside.

Step 2

Preheat the oven to 400 degrees F.

Step 3

In a small bowl combine the remaining olive oil and the SWEEETHEAT All Purpose Rub to form a paste.

Pat dry the salmon and set it skin side down on a baking dish. Using a sheet of oiled foil on the baking dish will make for easy clean up.
