This recipe shows how barbecue sauce is not limited to meat and can be and should be used on food that is meatless. We take a traditional potato dish and put a SWEEETHEAT twist on it. This recipe can be served as an appetizer or as a side dish. It is easy to make, incorporates a lot of flavor and uses 2 of our products. The potatoes are seasoned with our savory All Purpose Rub and sweet and flavorful Spicy Homey Honey barbecue sauce.
Lay out a piece of heavy duty aluminum foil and create a foil packet.
Spray the inside of the packet with cooking spray.
In a bowl mix together sliced potatoes, diced onion, all purpose rub.
Pour the barbecue sauce and half of shredded cheddar cheese over top of the mixture. Mix it all together.
Pour mixture into aluminum foil packet.
Place another sheet on foil over the top of the foil packet and crimp the edges to seal the packet.
Put the potatoes on the grill on medium and let it cook for 25 minutes. Flip the foil packet halfway through. The time to cook the potatoes will vary based on how hot your grill is and how thinly you sliced the potatoes. The potatoes are done when a fork goes into them easily.
Once the potatoes are cooked, remove the potatoes from the grill, pour into a pan and top with the remaining shredded cheese.
Cover and let them rest for 5 more minutes to melt the cheese.
