SWEEETHEAT Crispy Chicken Sandwich

This crispy chicken sandwich is nothing but deliciousness.  The chicken, which is moist with a crunchy golden brown exterior, is placed on a bun that is spread with a chipotle remoulade and sliced dill pickles.  This sandwich can compete with the infamous Popeye’s Chicken Sandwich. This recipe uses our SWEEETHEAT All Purpose Rub to season the chicken and the spread is our SWEEETHEAT Chipotle Remoulade.

SWEEETHEAT Crispy Chicken Sandwich
Prep Time: 1 hour, 20 minutes
Cook Time: 6 minutes
  • 1 Quart Water
  • 1/4 Cup Kosher Salt
  • 1/4 Cup Sugar
  • 1 Cup All Purpose Flour
  • 3/4 Cup Corn Starch
  • 1 Teaspoon Baking Powder
  • 3 Tablespoons SWEEETHEAT All Purpose Rub
  • 3/4 Cup Cold Water
  • 4 Chicken Breasts, boneless, skinless
  • 4 Brioche Buns
  • Dill Pickle Slices
  • 1/4 Cup SWEEETHEAT Chipotle Remoulade
  • 3 Quarts Vegetable Oil for Frying
  1. Pound chciekn to 1/2 inch - 3/4 inch thick.
  2. Combine water, salt and sugar in a large bowl until the sugar/salt are dissolved.
  3. Add chicken, cover and refrigerate for 1 hour.
    Crispy Chicken
  1. Combine flour, corn starch, baking powder and All Purpose Rub in a bowl. Remove 3/4 cup of flour mixture and place in a shallow pan (this is the dry dredge).
  2. Add 3/4 cup cold water to the remaining flour mixture and whisk until smooth.
  3. Heat the vegetable oil over medium heat to 350 degrees in a Dutch oven or deep pan.
  4. Remove chicken breasts from the brine; pat dry with paper towels.
  5. Dip the chicken breasts into the dry mixture, shake off excess flour and then dip into batter ensuring it's coated on both sides. Allow the excess batter to drip off the chicken. Dip the chicken back into the dry mixture to coat.
  6. Place Chicken breasts into the hot oil. Cook until the chicken is a deep golden brown and the internal temperate reaches 165 degrees.
  7. Remove the chicken from the oil and place on a paper towel lined plate.
    To Assemble
  1. Spread 2 tablespoons Chipotle Remoulade over the bottom half of each roll. Top with pickles, crispy chicken and the top half of each roll.
