SWEEETHEAT Peach and Berry Cobbler

This dessert recipe uses our Southern BBQ Blend. The rub adds some depth and a touch of heat to this to dessert.  Besides the use of fresh fruit, Southern BBQ Blend is the star of this dish. Break out your cast iron skillet, mix the ingredients together and bake.  As an added bonus serve with ice cream.

SWEEETHEAT Peach and Berry Cobbler
  • 1/2 Cup Dark Brown Sugar
  • 1/2 Cup White Sugar
  • 3 Tablespoons Cornstarch
  • 3 Teaspoons SWEEETHEAT Southern BBQ Blend
  • 4 Medium Peaches, peeled and sliced
  • 2 Cups Mixed Blackberries and Blueberries
  • 1 Tablespoon Lemon Juice
  • 1 Cup All Purpose Flour
  • 1/4 Cup Sugar
  • 3/4 Teaspoons Baking Powder
  • 1/4 Teaspoon Salt
  • 1/4 Teaspoon Baking Soda
  • 3 Tablespoons Cold Butter
  • 3/4 Cup Buttermilk
  1. Preheat oven to 375 degrees.
  2. In a large bowl, mix sugar, cornstartch, SWEEETHEAT Southen BBQ Blend.
  3. Add peaches and berries; toss to combine.
  4. Transfer to a 10 inch cast iron.
  5. In a small bowl, whisk the first 6 topping ingredients.
  6. Cut in butter until mixture resembles coarse crumbs.
  7. Add buttermilk; stir just until moistered.
  8. Drop mixture by tablespoonfuls over peach/berry mixture.
  9. Bake 40-45 minutes uncovered until topping is golden brown.
