About this Recipe

Grew up in the South? Shrimp creole was probably a staple on your mom’s dinner table! It’s comfort food at its finest—easy to whip up and bursting with flavor. But let’s get real, it can get a bit blah after a while. So, I decided to shake things up and take this classic to a whole new level!

First, I swapped the usual tomato sauce for a zesty salsa verde. Then, I tossed in some fresh herbs like cilantro and parsley to really brighten things up. And for a salty twist, I crumbled some feta cheese on top. The result? A shrimp creole so delicious and flavorful, it’s bound to be your new family fave!

What is Shrimp Creole

Shrimp Creole is a Louisiana classic—think shrimp in a rich tomato sauce. But why stick to the basics? I added a little zing with extra flavors! It all starts with sautéing onions, celery, and green peppers in olive oil until they’re nice and soft. Then, garlic and tomato paste join the party. In came diced tomatoes, chicken broth, white wine, and a mix of spices like cayenne pepper, paprika, oregano, thyme, and salt.

After simmering for about 30 minutes, the shrimp is added and cooked until perfectly pink. Served over rice, this dish is packed with flavor and definitely hits the spot for those spicy cravings!

Spice Up Your Shrimp Creole!

  1. Fresh is best! Always go for fresh shrimp, cleaned and deveined. Fresh veggies make a difference too, but mixing with frozen can also boost flavor.
  2. Keep the rice separate! This way, you can control its cooking time and don’t let it soak up all that delicious sauce.
  3. Quality Creole seasoning is key! A good seasoning brings authentic taste and spice. Taste before adding more, as some brands can be a bit salty.
  4. Simmer away! Letting it simmer longer means richer flavors and a more enjoyable dish.

Step-by-Step Instructions

Ingredients

  • 1 medium onion, diced
  • 2 stalks of celery, diced
  • 1 green bell pepper, diced
  • 2 cloves of garlic, minced
  • 1/2 – 1 jalapeno, seeded and minced
  • 1 stalk of green onion, white and green parts sliced
  • 3 slices of bacon, cooked and chopped, 2 tablespoons of bacon grease reserved
  • 2 tablespoons of all purpose flour
  • 2 tablespoons of SWEEETHEAT All Purpose Rub
  • 1 can of crushed or petite diced tomatoes, no salt added
  • 1/2 – 3/4 cup of water to thin as needed (shrimp stock works great if you happen to have that)
  • 3-4 dashes of Worcestershire Sauce
  • Tabasco sauce, to taste
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 1 – 1 1/2 pounds of shrimp, cleaned, shelled, deveined (I use 16-22 count gulf shrimp, but whatever you can get works just fine)

Note: Make sure you have all of your ingredients chopped and ready to go, this dish really doesn’t take too much time to put together and having everything handy ensures an easy process.

Step 1

Clean shrimp thoroughly and place in a large bowl. Sprinkle with 1 tablespoon SWEEETHEAT All Purpose Rub and turn multiple times to evenly coat all shrimp. Cover bowl tightly with plastic wrap and refrigerate until ready to cook, up to 4 hours ahead.

Step 2

Heat bacon grease in a large, flat-bottomed skillet (non-stick or cast iron work best) over medium heat until it develops a nice sheen. Add diced onions, celery, and bell pepper. Cook the trinity of vegetables until they’re softened and the onions turn translucent, about 5 minutes.

Step 3

Add the minced garlic, jalapeño, salt, pepper, and remaining 1 tablespoon Sweet Heat AP Rub to the vegetable mixture. Stir frequently and cook for another minute to release the garlic’s fragrance.

Step 4

Evenly sprinkle flour over the seasoned vegetables. Cook for 2-3 minutes while stirring constantly. This step is crucial – you want to cook out the raw flour taste without browning it, allowing all flavors to meld and ensuring a perfectly thickened sauce.

Step 5

Pour in the canned tomatoes, Worcestershire sauce, Tabasco sauce, bay leaf, salt, pepper, and 1/2 cup of water. Stir thoroughly to combine all ingredients into a uniform sauce mixture.

Step 6

Bring the sauce to a low boil, then reduce heat to maintain a steady simmer. Cook for 30 minutes total, stirring every 10 minutes to prevent sticking. The sauce will gradually thicken – add small amounts of water if needed to maintain desired consistency.

Step 7

Once the sauce has simmered for the full 30 minutes, taste carefully and adjust any seasonings to your preference. Add the seasoned shrimp to the simmering sauce and cook for 5-6 minutes, flipping them once halfway through, just until they turn pink and are fully cooked.

Step 8

For serving, spoon generous portions of the hot shrimp creole over a bed of freshly cooked rice, warm grits, or crusty French bread. Top each serving with a sprinkle of chopped bacon and sliced green onions for added texture and flavor.

Step 9

Place the bottle of Tabasco sauce on the table for diners who enjoy extra heat, and serve immediately while everything is piping hot.
