Spiced Molasses Bundt Cake With Rum Glaze
Ingredients

For the Bundt Cake

  • Cooking Spray or Vegetable Oil for greasing Bundt Pan
  • 2 ½ Cups All Purpose Flour
  • 2 Teaspoons Baking Powder
  • 1 Teaspoon Baking Soda
  • 1 Tablespoon SWEETHEAT Southern BBQ Blend
  • 2 Large Eggs (Room Temperature)
  • 1 Cup (2 Sticks) of Salted Butter – Softened
  • ¼ Cup Dark Rum
  • 1 Cup Molasses
  • ½ Cup Hot Water
For the Glaze

  • ½ Cup Confectioner’s Sugar
  • 1 Tablespoon Dark Rum
  • 1 Tablespoon Light Cream
  • 1 Teaspoon SWEEETHEAT Southern BBQ Blend

Step by Step Instructions

Step 1

Preheat oven to 350°F. Grease a standard bundt pan with cooking spray or alternatively brush the inside of the bundt pan with vegetable oil until completely covered. This prevents the cake from sticking to the pan after baking is complete.

Step 2

In a large bowl, whisk together the flour, baking powder, baking soda, baking soda, and SWEEETHEAT Southern BBQ Blend until well combined.

Step 3

In the bowl of a standing mixer fitted with the paddle attachment, cream the sugar and margarine by beating on medium speed for 3 to 5 minutes until creamy, fluffy, and almost white. Add eggs one at a time until fully incorporated before adding the dark rum.

Step 4

Slowly add dry ingredients one cup at a time until incorporated. Scrape down the sides of the bowl to ensure all ingredients are mixed well. Add molasses and hot water and mix for one more minute.

Step 5

Pour finished batter into the greased bundt pan and bake for 35 to 40 minutes or until a toothpick comes out clean. Cool for 10 minutes in the bundt pan before inverting onto a wire rack. Lightly tap around the outside of the bundt pan with a wooden spoon to loosen the cake before carefully removing the bundt pan. Then make the glaze.

Step 6

For the glaze, use a small bowl to whisk together confectioner’s sugar, dark rum, light cream and 1 teaspoon of SWEEETHEAT Southern BBQ Blend until smooth. Drizzle over cake and let stand for 10 to 15 minutes until the glaze hardens. Enjoy!.
